Coca-Cola Cupcakes!
1 cup of coke
1/2 cup of butter
1/2 cup of veg oil
1/4 cup of cocoa powder
Handful and half of marshmallows
2 cups of flour (if it's not already rising flour then you'll need a teaspoon of baking soda)
2 cups of sugar
1 teaspoon vanilla
1 cup buttermilk ( I just used regular)
2 eggs
1. In a large mixing bowl mix the flour (B-soda if needed), sugar, vanilla, eggs, and butter milk.
2. In a sauce pan mix the coke, butter, oil, and cocoa powder. Let it heat up while you're adding the ingredients (med to med high) until it all melts together and sort of thickens (about 5 minutes), just continually stir it. Add the marshmallows while it's still hot.
3. Put the mixtures together and bake for 18-20 minutes. It'll make around 2 dozen.
* The batter will look watered down and bubbly. An ice cream scoop makes it easier to fill the tins! I used Duncan Hines Classic Vanilla icing. If you have questions, just message me. Happy cooking!!
