Spicy Maple Chicken with from-scratch Mashed Sweet Potatoes & Roasted Green Beans!

Ingredients:
-2 Sweet Potatoes
-2 TBSP Maple Syrup
-1 tsp Chili Flakes
-2 TBSP Sour Cream
-1/2-1 Cup Panko Breadcrumbs
-1 TBSP Fry Seasoning
-2 Chicken Breasts (12 oz)
-6 oz Green Beans
1. Peel & Dice Sweet Potatoes into 1/2 inch pieces.
2. Reserve 1 tsp of Maple Syrup for Sweet Potatoes; pour remaining in bowl. Stir in a pinch of salt & chili flakes to taste. Set Aside.
3. Boil Sweet Potatoes in 2 inches of salted water for 15-20 minutes. Drain & Return. Mash off of heat. Stir in reserved Maple Syrup, 1 TBSP of Sour Cream, 1 TBSP of Butter, salt and pepper.
4. Make a crust for chicken with 1 TBSP of butter, in microwave for 30 seconds; Stir in Panko Crumbs, Fry Seasoning, 1 TBSP olive oil, & pinch of salt.
5. Pat chicken dry with paper towels. Season with salt & pepper. Place on baking sheet. Spread on sour cream plus Panko mixture. Roast chicken for 8 minutes on 425 degrees.
6. Toss Green Beans with drizzle of olive oil, salt, & pepper. Add to chicken in oven for another 12-15 minutes.
7. Drizzle spicy maple syrup over chicken.
